José Antonio's Traditional Dominican Cucina (Kitchen)

Published 2 February 2009

This sublime organic fruit farm near Bani in the Dominican Republic keeps getting more refined and improved with each visit.

This farm, though not large, produces mangos, limes, bananas and plantains, zapotas, cajuiles, manzana d’oro, manzana de agua, as well as piña, coconut, guyaba or guyabana, and several other more unique and exotic fruits.

This panorama allows a peek inside the traditionally constructed cucina and reflects the relative simplicity, sensibility, and cleanliness of Dominican cooking and the traditional caribbean lifestyle.
